Ingredients:
2 T cooking fat
1 pound bonless skinless chicken; cubed
1/2 tsp salt
1/2 tsp black pepper
1/4 cup chopped walnuts
1 sweet potato; peeled & grated
1 apple; cored, peeled, diced
1/2 tsp red pepper flakes
1/4 cup apple cider
2 handfuls spinach
Splash apple cider vinegar

Instructions:
1. Brown chicken in cooking fat with salt & pepper. Cook approximately 2-3 minutes.

2. Add walnuts & cook 2-3 minutes.
3. Add sweet potato, apple, & red pepper flakes. Cook 3-4 minutes or until chicken is fully cooked.
4. Add apple cider & spinach. Cook another 30 seconds or until spinach leaves are wilted.
5. Drizzle with apple cider vinegar.
6. Enjoy!
